If you have just got the Jamie Oliver 15 Minute Meals book you have probably just spent a whole weekend driving around trying to find preserved lemons. In our experience it was very hard to find in supermarkets, very few deli's stock the product and the one who did wanted an arm and a leg for a one bottle. Solution...make your own :)
Things you will need:
- lots of lemons
- jars with firm fitting lids (Woolies for $2-$3 or from a cheap shop)
- sack of salt
- lemon juicer
- bowl and spoon

Method:
- Cut the lemons into quarters, leaving the last centimetre or so unsliced.
- Put about a tablespoon of salt inside the lemon and close it up.
- Place the salted lemons in sterilized preserving jars (boil your jars in water for 10 mins).
- Add a couple of extra tablespoons of salt to the jars for good measure and then fill with lemon juice (that you have freshly squeezed), ensuring the lemons are completely covered to prevent mold.
- Put the lids on tightly and leave in the cupboard out of light for at least six weeks (Label them with the date of canning to be sure).
