Got this recipe from a new blog that I have been following called "Good Food, Shared" by Lisa Duffy in Ireland. Some great look food on her blog and I saw this go up today and decided this would be my dinner :) Mine didn't look as pretty but I had less chicken and kept the same amount of soy so it's quite dark.
What I really enjoyed about this was that it had lots of veg (my favourite ones) with a lesser amount of meat and noodle. After having a few crazy days with work I've been missing out on delicious, full meals.
The ingredients I used: 1 chicken breast, 1/2 zucchini, 3/4 capsicum, hand full of snow peas, 4 stems of baby corn, 2 packets of instant noodles (Mi Goreng without the flavours - might include the flavours next time and see what that does), bit of oil, 2/3 tablespoon dark soy, heaped teaspoon corn flour, 1/2 tablespoon Chinese five spice (will use less for this amount of chicken next time).
Cut chicken in to small chunks or thin slices, mix in a bowl with Chinese five spice and soy. Marinade in fridge while preparing the rest.
Throw the noodle in a bowl of boiling water and let sit, cut the veg to desired size and place to the side. Check noodles, when they are soft and you are satisfied that they have absorbed enough water, drain and set to the side.
Start heating the wok with a bit of oil and grab the chicken. Mix in the corn flour with the chicken.When the wok is hot enough add the chicken. You want to try and brown it on all sides. This was a bit hard for me to see because the soy made it so dark but got perfect chicken in the end.
